Breakfast Casserole

Makes good eating anytime, but it is quick and easy breakfast for when you have an overnight guest.

6 slices of bread 1/2 pound Sausage or Ham
1 cup shredded cheese 3 eggs slightly beaten
2 cups of milk 1/2 teaspoon salt
dash of black pepper dash of nutmeg
1 teaspoon of Worcestershire sauce 1 teaspoon dry mustard

Brown the sausage and drain, if using ham dice into small pieces.

In bowl mix eggs, milk, salt, pepper, nutmeg, Worcestershire sauce, dry mustard, and meat

Grease casserole dish, line bottom with bread, pour mixture over the bread sprinkle top  with cheese.

Refrigerate overnight. Bake at 350 degrees for 45 minutes.

 

Breakfast Casserole 2

 

8 slices of bread, cubed 1 pound Sausage or Ham
11/2 cups shredded cheese 8 eggs slightly beaten
1 quart of milk 1/2 teaspoon salt
dash of black pepper dash of nutmeg
1 teaspoon of Worcestershire sauce 1 teaspoon dry mustard

Brown the sausage and drain, if using ham dice into small pieces.

In bowl mix eggs, milk, salt, pepper, nutmeg, Worcestershire sauce, dry mustard, and meat

Chocolate Gravy

  • 4 tablespoons cocoa
  • 1 1/4 cup Sugar
  • 5 tablespoons corn starch
  • 4 cups milk
  • 1 teaspoon vanilla
  • 1 tablespoon butter

 1. Combine all dry ingredients together in a 2 quart saucepan, stir around to remove all lumps.

2. Add milk to pan and stir constantly over medium heat. 

3.When thickened remove from heat, add vanilla, and butter, stir well.

This was a recipe handed down from Bobbie's mother and she handed it to her children and us.

Chocolate gravy is used on biscuits for breakfast with a pat of butter.

Overnight French Toast

  • 2 tablespoons corn syrup
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 loaf French bread, sliced 1" thick
  • 5 eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
   

Preparations:

1. Combine the corn syrup, butter, and brown sugar in a small saucepan and simmer until the sugar has melted, stirring frequently. Pour this mixture into a greased 9 x 13 inch casserole dish Place the bread slices over the sugar-butter in the dish.

2. In a large bowl beat together eggs, milk, vanilla and salt; pour this mixture over the bread. Cover and refrigerate overnight.

3. The next morning, preheat oven to 350 degrees. Uncover the casserole dish and bake for 45 minutes. Serve while hot or warm, since the French toast will harden in the pan as it cools. Can be reheated.
