Breakfast Casserole

Makes good eating anytime, but it is quick and easy breakfast for when you have an overnight guest.

6 slices of bread 1/2 pound Sausage or Ham
1 cup shredded cheese 3 eggs slightly beaten
2 cups of milk 1/2 teaspoon salt
dash of black pepper dash of nutmeg
1 teaspoon of Worcestershire sauce 1 teaspoon dry mustard

Brown the sausage and drain, if using ham dice into small pieces.

In bowl mix eggs, milk, salt, pepper, nutmeg, Worcestershire sauce, dry mustard, and meat

Grease casserole dish, line bottom with bread, pour mixture over the bread sprinkle top  with cheese.

Refrigerate overnight. Bake at 350 degrees for 45 minutes.

 

Breakfast Casserole 2

 

8 slices of bread, cubed 1 pound Sausage or Ham
11/2 cups shredded cheese 8 eggs slightly beaten
1 quart of milk 1/2 teaspoon salt
dash of black pepper dash of nutmeg
1 teaspoon of Worcestershire sauce 1 teaspoon dry mustard

Tuna Wedges

2 eggs   1/2 cup butter or margarine
1 1/2 cups cooked rice 1 cup dry bread crumbs
1/2 cup chopped onions  1 cup grated cheese
2 cans Tuna  

Large mixing bowl, beat eggs with fork, add rice, onions and un-drained tuna, mix well.
In small bowl melt butter, add crumbs.

Spread bread mixture into the bottom of a 9" lightly greased pie plate, evenly add tuna mixture.
Microwave on high heat for 9 to 11 minutes. halfway through time add cheese to melt it on top.

Note: You can use green onions for the onions, also you can use oil or water packed tuna,
or a combination of the two. Enjoy
 

Beef and Cheese Casserole

Ingredients:

1 1/2 lb. Ground Beef 1 medium Onion, chopped fine
1/4 tsp. Pepper 1/4 tsp. Pepper
2 (8 oz.) cans Tomato Sauce 1 C. Cottage Cheese
1 (8 oz.) pkg. Cream Cheese 1/4 C. Sour Cream
1/3 C. chopped Green Bell Pepper 1/3 C. chopped Green Onion
1 (8 oz.) pkg. Noodles, cooked, and drained  

Preparation:
1. Brown ground beef and onion in skillet. Add salt, to taste, pepper and tomato sauce; simmer slowly while preparing remaining ingredients. Combine cottage cheese, cream cheese, sour cream, green pepper and green onion. Place half of cooked noodles in a greased 3 qt. baking dish.

2. Top with cheese mixture over top, and then remaining noodles. Pour meat mixture over top Bake at 350 degrees for 30 minutes.

3. Bake at 350 degrees for 30 minutes. Yields 8 to 10 servings.

 

Beef Tamale Squares

  • 1 box corn muffin mix (8.5-oz.)
  • 1 1/2 cups water
  • 2 eggs
  • 1 tablespoon chili powder
  • 1 pound ground beef, cooked and drained
  • 1 jar of salsa (16 -oz.)
  • 2 cups shredded cheese, divided
  • 1 cup frozen corn, defrosted
  • Lettuce, shredded for serving
 

Preparations:

1. Preheat oven to 450 degrees. Lightly grease 12 x 8 baking dish

2. Combine muffin mix, water eggs, and chili powder in medium size bowl; add beef, salsa, corn and 1 cup of cheese,

place into prepared baking dish.

3. Bake for 20 minutes; top with remaining cheese. Bake for an additional 5 minutes or until knife inserted near center comes out clean. Let stand for 10 minutes before serving. Serve with lettuce.

 

Quick Chicken and Noodles

  • 4 chicken breast fillets
  • 1 can condensed chicken broth
  • 3/4 cup water
  • 1/2 teaspoon dried basil leaves
  • 1/8 teaspoon pepper
  • 2 packages Ramen noodles
  • 1 package frozen peas and onions
  • 1/4 teaspoon paprika

1.  In a skillet, over medium-high heat add 1 tablespoon oil, and chicken. cook 10 minutes or until browned on both sides. Remove chicken and drain of oil.

2. In the same skillet combine broth, water, basil, pepper. Heat to boiling.

3. Return chicken to skillet, add noodles and peas. return to boiling reduce heat to low. Cover 5 minutes or until chicken is no longer pink, stir occasionally to separate noodles, sprinkle with the paprika. Serve 4

 

Chicken Meal-In-One

  • 4 1/2 cups frozen shredded hash brown potatoes
  • 1 cup frozen sliced carrots
  • 1 can (10 3/4 0z.) Cream of Chicken or Mushroom soup
  • 2 tablespoons dry onion soup mix
  • 2 cups frozen cut green beans
  • 4 bone-in chicken breasts  (6 oz each)
  •  3/4 cup water
  • salt and pepper to taste

 

1. In greased 13 x 9 x  2 baking dish, combine hash browns, beans and carrots. Put chicken on top.

2. Combine soup, soup mix and water mix well, pour over the top of chicken and vegetables.

3. Cover and bake at 375 degrees for 50 minutes. Uncover; bake 25-30 minutes longer or until chicken juices run clear. Salt and pepper to taste
